change custom category page

Hi,

1.) see picture “01 category frontend.jpg”
How/where can I change “Showing all … results” and “Default sorting” (text, language, visible/invisible …) ?

2.) see picture “02 backend category template.jpg”
The title of the page “Edit Category Template” is “Edit Product Template”. Could you change this?
